9 Healthy Fall Recipes I’m Kind of Obsessed With Right Now If you walked into my kitchen right now, you’d smell cinnamon, and you’d probably find a pot of something simmering on the stove. Fall does that to me. As a trainer in my 60s who still teaches group fitness every week, I need food that fuels me, not food that feels like a punishment, and fall is the season where “healthy” and “actually delicious” finally stop fighting each other. These are the nine recipes I’m cooking this month. Some are dinners I make on repeat because they’re easy and they freeze well. A few are the pumpkin everything you’ve been waiting for since August. And one is a dessert I will defend until the day I die. No deprivation here, ladies. Just real food, real flavor, and a little protein woven in wherever I can get it. Monk fruit: I like using this sugar-free sweetener for baking. It works great in this recipe! You could also swap the chocolate chips for a dried fruit like raisins or cranberries.   Add Nuts: instead of or in addition to the chocolate chips, you can add some chopped nuts like walnuts or pecans. I also like baking this with some pumpkin seeds sprinkled on top.  How to Make Banana Bread with Oat Flour This healthy banana bread recipe is simple to put together in a few steps.  Prep the oven and pan: preheat the oven to 350 degrees Fahrenheit and spray a standard loaf pan with cooking oil and then line with parchment paper so you can lift it out of the pan after baking.  Mix the wet ingredients: In a large mixing bowl, mash the bananas with a fork. Whisk in the eggs, yogurt, and monk fruit sweetener.  Add the dry ingredients: Stir in the oat flour and baking powder just until combined. Fold in the chocolate chips (if using). Bake: Bake for 45-55 minutes or until golden brown on top and toothpick inserted in the center comes out clean. Allow to cool completely before slicing.  Storage Fridge: allow loaf to cool completely then slice. Store slices in an airtight container in the fridge for 3-4 days. It’s incredibly simple to make and endlessly customizable. You’ll start by spreading a layer of Greek yogurt onto a baking sheet, top with your favorite fruit and nuts then freeze until solid. Made as written, this is a delicious gluten free treat! You can also turn this bark into an easy and healthy dessert option by drizzling it with some melted dark chocolate or a sprinkle of chocolate chips. This recipe is a great one for meal prepping on the weekend so you have a healthy snack that’s ready to go. While you make a batch of this yogurt bark, prep a couple of my other homemade snacks like my no-bake energy bites with peanut butter or healthy oat flour banana muffins.  Ingredients for Frozen Yogurt Bark Use these simple and fresh ingredients packed with nutritional value to make this delicious frozen yogurt bark recipe. Be sure to check out the recipe card for the exact amounts of each ingredient you’ll need.  Greek yogurt: use unsweetened and plain Greek yogurt. Any level of fat will work, although the higher fat options (like full-fat Greek yogurt) will make a creamier yogurt. The low fat or fat free Greek yogurts have a more icy texture after freezing. For more flavor, you could also use an unsweetened vanilla Greek yogurt.  Honey: add a little sweetness to your bark with some honey. You can omit the sweetener if you want an unsweetened bark. If you don’t have honey on hand, you can substitute with maple syrup.  Raspberries: we love the addition of fresh raspberries, but other fresh berries like blueberries or strawberries work just as well. If using fresh strawberries, be sure to chop into smaller pieces.   Pistachios: I love the pop of color that pistachios add to this bark and the combo of pistachios and raspberries is delicious. If you don’t have pistachios, you can substitute with chopped almonds.  Hemp hearts: a sprinkle of hemp hearts provides extra fiber and heart healthy omega-3 fatty acids.  Variations Add more protein: make this a high protein snack by stirring 1 scoop of plain or vanilla flavored protein powder into the greek yogurt before spreading the yogurt mixture out onto the sheet pan.  Try different fruit: feel free to use any fresh or frozen fruit that you would like. Just be sure to cut any fresh fruit into small pieces for the bark so that it’s easier to eat. Berries are my top pick, but you could also do a tropical version with mango or sliced banana and coconut flakes or one for fall with chopped apples and cinnamon. Make it a dessert: drizzle the bark with melted chocolate or sprinkle it with chocolate chips. Spread the greek yogurt evenly over the baking sheet.  Add toppings: Sprinkle with the raspberries, pistachios, and hemp hearts.  Freeze: Freeze for 3 hours or until firm. Craving sweet potato fries but want to make them a little healthier than the deep fried ones at your favorite restaurant? Use the specific techniques that we talk about in this post to take your baked sweet potato fries to the next level. While not quite the same as the deep fried version, these baked sweet potato fries are crisp but tender on the inside.  These sweet potato fries are a go-to side for grilled burgers in the summer or served alongside (or on top!) of one of my healthy salad recipes! They’re also great dipping in a homemade sauce like a sriracha aioli or just some ketchup. You can make this recipe your own by experimenting with different seasonings for the fries before baking.  Ingredients You’ll Need Use these simple and fresh ingredients packed with nutritional value to make this delicious oven baked sweet potato fries recipe. Be sure to check out the recipe card for the exact amounts of each ingredient you’ll need.  Sweet potatoes: of course, you’ll need sweet potatoes to make these fries. For this recipe, you’ll need about 2 medium potatoes. You can also try this method with sweet potato wedges but they won’t be quite as crisp. Cornstarch: tossing the sweet potatoes in a bit of cornstarch before baking helps absorb the moisture in the potato and results in a crispier fry (without a fryer).  Avocado oil: you’ll be baking these at high heat in the oven so I recommend a cooking oil that can stand up to high heat like avocado oil rather than olive oil.  Sea Salt: sprinkle the fries with a bit of sea salt before baking to add flavor. You can add a sprinkle of black pepper too if you like.  How to Season Baked Sweet Potato Fries Feel free to experiment with a variety of different spices to season your sweet potato fries. Here are a few options to get you started:  Chili powder or chipotle powder Cinnamon and nutmeg Cajun seasoning Garam masala or curry powder Cumin and cayenne pepper How to Make Sweet Potato Fries This healthy baked sweet potato fries recipe is simple to put together in a few steps.  Preheat the oven: Preheat the oven to 425 degrees Fahrenheit and line the sheet pan with parchment paper. Prep the potatoes: Peel the sweet potatoes and cut them into ¼ inch thick fries. (I found that they turned out better when peeled so it’s worth the extra step.) Add to a large bowl and toss with cornstarch, avocado oil, sea salt, and paprika. Spread onto the baking sheet in a single layer, making sure that no fries are touching to ensure the best crisp. (Cooking time may vary slightly from batch to batch or depending on your oven.) Some recipes call for soaking the sweet potatoes in cold water, but I didn’t find this was really necessary for crispy fries.  Bake and serve: Bake for 20 minutes, flip and bake for another 10-18 minutes until the tips are dark brown. Serve right away with a small bowl of your favorite dipping sauce like ketchup, aioli, or barbecue sauce.  What to Serve with Sweet Potato Fries These yummy sweet potato fries make a great addition to a variety of our favorite meals. A creamy and decadent healthy dessert made with less than 10 ingredients.  If you think that avocados are just for toast or guacamole, you’ll be shocked when you find out they are the secret ingredient for this rich and delicious chocolate pudding. That’s right, you can create decadent pudding without dairy!  You can’t taste the avocado in the finished pudding either – I promise! They just provide the creamy texture that you would expect in a chocolate pudding recipe or mousse. Even better, there are tons of great benefits of eating avocados! This chocolate avocado pudding makes a great after dinner treat, but you could also pack it as a snack. (The perfect afternoon pick-me-up). I’m not going to lie, cottage cheese wasn’t a staple in our kitchen until it started gaining popularity on tiktok and instagram. I’ve tried cottage cheese scrambled eggs, cottage cheese ice cream, and these 3 ingredient protein pancakes! This simple 2-ingredient cottage cheese ranch dip was so simple to make and was the perfect addition to the healthy snack options we try to keep on hand.  Why make this dip instead of just using ranch dressing? We think it’s worth taking the extra step to stock your fridge with this dip since it’s higher in protein thanks to the cottage cheese and low calorie in comparison. This high protein dip is gluten free, low carb, and is also higher in calcium than regular ranch dressing.   Ingredients for Cottage Cheese Ranch Dip Use these simple and fresh ingredients packed with nutritional value to make this delicious cottage cheese ranch dip recipe. Golden Turmeric Tea Cold and flu season is upon us again. If you want to give your immune system a fighting change, try sipping on a cup of this antioxidant-rich ginger turmeric tea.  As soon as the temperature drops enough to start needing a cozy knit sweater, our hot water kettle gets put to work. The small joy of brewing up a cup of tea is one of my go-to ways to get through the long dark days of winter. In addition to brewing my favorite loose-leaf tea blends (like chai or flavored black tea), it’s been fun to experiment with other homemade teas like this golden turmeric tea with ginger. There’s a lot to love about this vibrant turmeric ginger tea. For one, it takes just a few minutes to brew once you have a pot of hot water on the stove. I almost always have some fresh ginger root stored away in the freezer for curry or stir fry; it also makes great herbal tea.  You’ll want to think of this ginger turmeric tea as the less potent cousin of the turmeric shot. Both offer the same turmeric health benefits, but this tea is an option for those who prefer to savor their beverages a bit.  Why You’ll Love this Golden Turmeric Tea Made with just a few fresh ingredients in minutes on the stovetop. You can usually find fresh turmeric in the produce section of the grocery store with the other root vegetables like onions and garlic. In a pinch, you can substitute with ½ teaspoon of ground turmeric. Ginger: for a stronger flavored tea, use fresh ginger root.  Cinnamon: we like to pair the turmeric and ginger with cinnamon but this is optional. You can use either ½ teaspoon ground cinnamon or add 1-2 sticks of cinnamon to the pot when brewing your tea to add great flavor.  Lemon: the brightness and tanginess of the lemon helps balance the peppery/bitter flavor of the turmeric and ginger. Plus, there are benefits that come with drinking lemon water! Black pepper: in order to better absorb the curcumin in the turmeric, pair it with black pepper – it contains pepperine which significantly improves absorption.  Honey: add a bit of sweetness to the tea with some honey (which also provides some antioxidants and other health benefits). If you don’t want to use honey, try maple syrup, skip the sweetener altogether, or use your favorite alternative sweetener.  Variations Make it spicy: if you’re feeling a cold come on or like a little bit of spice, you can add a pinch of ground cayenne to this tea as well. It’s a common addition to turmeric shots – which are similar to this tea. Use orange: you can swap the lemon out for orange instead. It adds some sweetness and helps balance out the bitter flavors of the turmeric and ginger. Adding some orange zest to the tea while brewing can optimize the orange flavor in the finished tea.  Use dried spices: you can use ½ teaspoon each of ground turmeric powder and ground ginger, but I recommend using fresh spices for the best flavor.  How to Make Golden Turmeric Tea This healthy golden turmeric tea is simple to put together in a few steps. Bring Water to Boil: add 2 cups of water to a small saucepan and bring to a boil (or at least a simmer).  Steep the Tea: add the turmeric and ginger to the pot (or to a tea ball). Sprinkle in the ground cinnamon. Allow to steep for 5 minutes in the simmering water. Squeeze the juice from ½ lemon into the pot just before turning off the heat.  Strain & Serve: Strain through a fine mesh strainer (optional) into a mug. Add honey to taste and serve.  Health Benefits of Turmeric and Ginger Turmeric and ginger belong to the same plant family so it makes sense that they share many of the same health benefits. 1-Minute Protein Brownie in a Mug Are you a chocolate lover? You need to make this 1-minute protein brownie in a mug! Just 7 ingredients is all you need to make this healthier dessert recipe with almost 30 grams of protein.  If you’re like me, it’s hard to resist the craving for a sweet treat after dinner. I usually keep the freezer stocked with healthier treats like protein balls or healthy cookie dough bites. But when my stash has run out – this 1 minute protein brownie in a mug is my go-to! I’ve seen plenty of mug dessert recipes on my Instagram, but it took me entirely too long to finally give them a try. After testing out a few variations of this brownie recipe – I’m a big fan of mug desserts now! (The ultimate small batch dessert option.) Love that there’s very little dishes and I get to enjoy a protein dessert in less than 5 minutes.  Why You’ll Love this Recipe A healthier dessert option that is packed with satisfying protein while also satisfying your sweet tooth. You could even make this as a breakfast option since it is essentially baked oats in a mug. Who doesn’t love a warm brownie straight from the oven? This protein brownie in a mug has all the same vibes – but can be whipped up in less than 5 minutes with no egg or baking powder needed.  This brownie is easily customizable so you can make variations to fit your diet since it can be made gluten free, dairy free, egg free, and vegan. You can also add different mix-ins like peanut butter or white chocolate chips. Make your own oat flour by blending rolled oats in a high-speed blender until finely ground like flour (usually takes about 30 seconds to 1 minute in my Vitamix.) Milk: we like to use almond milk, but you can use any milk of choice for this brownie in a mug. Protein Powder: when testing this recipe, I used a plant-based protein powder and it worked really well but you can use any protein powder you prefer like whey protein. Vanilla protein powder was all that I had on hand, but for an extra chocolatey brownie, use chocolate protein powder.  Cocoa Powder: you can also use cacao powder. Adds chocolate flavor to this easy healthy brownie recipe.  Pure Maple Syrup: I love using maple syrup to sweeten healthier desserts like this one.  Chocolate Chips: you can skip the chocolate chips, but they are a delicious addition since they melt in the microwave so each bite of brownie has some melty chocolate. Instead of chocolate chips, you can also use chopped dark chocolate pieces. Salt: lean into the craveworthy sweet-salty flavor combo by topping your brownie with a sprinkle of flaky sea salt. You could also use PB2 instead of protein powder for a chocolate peanut butter brownie. Don’t like peanut butter? Try it with almond butter instead. Use a Sugar Free Sweetener: you can use a sugar free sweetener like monkfruit instead of maple syrup for these healthy protein brownies.  Fudgy Brownie: for a richer and more fudgy brownie, use almond flour instead of oat flour, just 3 tablespoons of milk and 1 tablespoon of melted coconut oil or olive oil. The healthy fat in the almond flour and oil adds richness and fudgy texture to this protein brownies recipe. How to Make A High Protein Brownie in a Mug These healthy high protein brownies are simple to put together in a few steps. Mix the Batter: mix together the dry ingredients (flour, protein powder, cocoa powder, and salt) with the milk and maple syrup in a small bowl or directly in your mug until a thick brownie batter forms. (You can also add ¼ teaspoon vanilla extract to the batter if you’d like.) Top with chocolate chips. Microwave: microwave for 45 seconds to 1 minute. Spices (Ground Cinnamon, Ginger, Nutmeg): a classic combo of spices for adding that carrot cake flavor we all know and love. Eggs: help these muffins hold their structure as well as adding moisture.  Pure Maple Syrup: instead of refined sugar, these healthier muffins are naturally sweetened with pure maple syrup. Plain Yogurt: use a plain yogurt for these muffins – full fat or low fat both work. You can also use Greek yogurt if you prefer. The yogurt helps make these healthier muffins moist. Avocado Oil: we like using avocado oil, olive oil, or coconut oil in our baked goods.  Carrot: you’ll need about 1-2 medium sized carrots for this recipe. I like to use the smallest size on my box grater because I like the smaller pieces of carrots in muffins like this one. Don’t use pre-shredded carrots.  Raisins: use regular or golden raisins for this healthy muffin recipe. If you aren’t a fan of raisins – you can leave them out.  Variations Try Different Mix-ins: Feel free to add other mix-ins to these muffins instead of raisins. These are also great with walnuts, pumpkin seeds, pecans, or shredded coconut. Use Applesauce: You can use applesauce instead of the pure maple syrup to sweeten these muffins.  Make Mini Muffins: Line a mini muffin tin with paper liners and fill with batter. Recipe should make 24 mini muffins. Reduce the baking time to 10-12 minutes.  Add Frosting: for an extra special treat, you can add this healthy cream cheese frosting (made with greek yogurt) to the top of these muffins once they have cooled to room temperature. They become healthier cupcakes! How to Make Healthy Carrot Muffins These healthy carrot muffins are simple to put together in a few steps. Preheat the Oven: Preheat oven to 350 degrees Fahrenheit. Add paper liners to each of the muffin cups in your muffin pan. (I highly recommend using the liners rather than just adding cooking spray to the muffin pan.) Mix the Dry Ingredients: In a large bowl, add the oat flour, almond flour, baking powder, cinnamon, baking soda, salt, ginger, and nutmeg. Stir with a whisk to combine.  Mix the Wet Ingredients: In a separate medium bowl, add in the eggs, maple syrup, yogurt, oil, and vanilla extract. Whisk well to combine.  Combine: Add the egg mixture to the flour mixture and stir just until mixed with a wooden spoon. Stir in the grated carrot and raisins.  Fill Muffin Pan & Bake: Transfer batter to the prepared muffin pan. Bake for 18-20 minutes or until the center is set. (You can test with a toothpick – it’s done when it comes out clean besides a couple of crumbs.) Storage Fridge: store cooled muffins in an airtight container in the refrigerator for up to a week.Freezer: cooled muffins can be stored in a ziplock bag or freezer safe container for up to 6 months. Thaw in the fridge overnight or warm up in the microwave for 30 seconds to 1 minute.
