Nutrition research shows people who consume breakfast do better in mental performance tests, have improved focus and even say they feel in a better mood when they have breakfast. What you eat matters too. Following a Mediterranean style of eating—which is rich in whole grains, pulses (like chickpeas), vegetables, fish, eggs, and olive oil, in addition to limiting saturated fats and sugars—has been found to protect our brain function as we age.  Keep reading for three delicious and nourishing recipes that put these strategies into practice—and promote brain health, mental strength, and longevity.  Turkish-Style Turmeric Eggs with Yogurt  Inspired by a traditional Turkish breakfast consisting of eggs, thick yogurt, spices and fresh herbs, this healthy and filling dish is  eaten alongside pita or crusty bread. It is so simple, yet a very unusual food combination for an American diner.  Bright colors of spices stand out against the white background of thick yogurt, which makes this meal beautiful enough to be the star of a special occasion brunch, but so ridiculously easy to prepare it could become your healthy weekday breakfast. The combination of eggs and thick Greek yogurt makes it rich in protein with about thirty grams per serving—the perfect start to a busy day.  Adding ground turmeric to the hot olive oil flavors the oil and brings color to the egg whites. The result is a vibrant orange egg. And, when combined with the red paprika (or aleppo pepper), bright green kale, and fresh herbs, the colors of this dish really stand out from the crowd. Try it served along some sort of pita or crust bread, so that you can scoop up and absorb the yogurt and egg yolks with each bite.  INGREDIENTS:  2.5 tablespoons olive oil, divided1 bunch kale (6 to 8 leaves), removed from stem and rough chopped   1/2 teaspoon smoked paprika, or aleppo pepper ½ teaspoon salt 1 teaspoon fresh black pepper ½ teaspoon turmeric 4 large eggs 1 cup (250 mL) plain unsweetened low-fat Greek yogurt 1 lemon, juiced and zested 1 clove of garlic, shaved  ½ teaspoon chili flakes, optional    1 round whole wheat pita, sliced in fourths  2 teaspoons mixture of fresh herbs such as mint, dill and parsley, rough chopped  INSTRUCTIONS:  Begin by preheating the oven to 375F (190C). Toss the torn kale with ½ tablespoon of olive oil, ¼ teaspoon salt, and ¼ teaspoon fresh ground pepper. Toss to coat and add the kale to the hot oven. Cook until it begins to wilt and get a little crispy at the edges. Approximately 6 to 8 minutes. Carefully remove from the hot oven and set aside.  Mix yogurt with 1 tablespoon lemon juice, ½ teaspoon of lemon zest, shaved garlic, and ¼ teaspoon salt. To prepare each plate, smear 1/4 cup of the yogurt mixture onto each plate using the back of a spoon and sprinkle with smoked paprika. Place half of the baked kale evenly around the yogurt on each plate.  Heat two tablespoons of olive oil over medium heat in a large well seasoned cast iron pan or nonstick skillet. Once oil gets hot, add the ground turmeric and stir to combine. Cook the turmeric in the oil until it becomes fragrant and well incorporated, approximately one to two  minutes. Keep the oil just below smoking point. A small drop of water added to the pan should immediately sizzle.  Carefully crack the eggs into the hot pan and season with remaining salt and pepper. As the eggs cook, tilt the pan to the side and use a spoon to baste the eggs with the turmeric olive oil. This will help the egg cook while keeping the center moist. It will also turn the whites bright yellow. Keep basting until the eggs are puffy and cooked, approximately one minute, or to your liking. Transfer to the plate and arrange on top of yogurt and kale.  Finish with a teaspoon of fresh herbs and serve with pita.  Makes 4 servings (one egg per person). Vegan Fry-Up List of Ingredients: #1 large potato, unpeeled #1 ¬Ω tbsp peanut butter #For the tomatoes and mushrooms #14 cherry tomatoes sunflower oil #2 tsp maple syrup #1 tsp soy sauce #¬º tsp smoked paprika #1 large Portobello mushroo, sliced #For the scrambled tofu 349g pack #silken tofu 2 tbsp nutritional yeast ¬Ω tsp turmeric #1 clove garlic, crushed #To serve 4 vegan sausages (we used Dee‚Äôs leek & onion) #1 x 200g can baked beans How to cook 1.Cook the potato whole in a large pan of water, boil for 10 mins then drain and allow to cool. Peel the skin away then coarsely grate. Mix with the peanut butter and season well. Set aside in the fridge until needed. #2.Heat oven to 200C/180C fan/gas 6. Put the cherry tomatoes onto a baking tray, drizzle with 2 tsp sunflower oil, season and bake for 30 mins or until the skins have blistered and start to char. Cook the beans and sausages following the instructions on the pack so they’re ready to serve at the same time as the scrambled tofu. #3.Meanwhile, mix the maple syrup, soy sauce and ¬º tsp smoked paprika together in a large bowl, add the sliced mushroom and toss to coat in the mixture. Leave to stand while you pour 2 tsp sunflower oil into a non-stick frying pan and bring it up to a medium high heat. Fry the mushroom until just starting to turn golden but not charred. Scoop onto a plate and keep warm until serving. #4.Put 1 tbsp oil into the frying pan and add spoonfuls of the potato mixture ‚Äì you should get about 4. Fry for 3-4 mins each side then drain onto kitchen paper. #5.Crumble the tofu into your frying pan and sprinkle over the remaining ingredients and a good pinch of salt and pepper. If the pan looks a little dry add a splash more oil. Fry for 3-4 mins or until the tofu is broken into pieces, well coated in the seasoning and hot through. #6.Divide everything between 2 plates and serve with a hot mug of tea made using soy milk. 2. Coconut & Banana Pancakes List of Ingredients: 150g plain flour #2 tsp baking powder #3 tbsp golden caster sugar #400ml can coconut milk, shaken well vegetable oil, for frying #1-2 bananas, thinly sliced #2 passion fruits, flesh scooped out How to cook 1.Sift the flour and baking powder into a bowl, and stir in 2 tbsp of the sugar and a pinch of salt. Pour the coconut milk into a bowl, whisk to mix in any fat that has separated, then measure out 300ml into a jug. Stir the milk slowly into the flour mixture to make a smooth batter, or whizz everything in a blender.#2.Heat a shallow frying pan or flat griddle and brush it with oil. Use 2 tbsp of batter to make each pancake, frying two at a time ‚Äì any more will make it difficult to flip them. Push 4-5 pieces of banana into each pancake and cook until bubbles start to pop on the surface, and the edges look dry. They will be a little more delicate than egg-based pancakes, so turn them over carefully and cook the other sides for 1 min. Repeat to make 8-10 pancakes.#3.Meanwhile, put the remaining coconut milk and sugar in a small pan. Add a pinch of salt and simmer until the mixture thickens to the consistency of single cream. Use this as a sauce for the pancakes and spoon over some of the passion fruit seeds. 3. Vegan Breakfast Muffins List of Ingredients: 150g muesli mix#50g light brown soft sugar #160g plain flour#1 tsp baking powder#250ml sweetened soy milk#1 apple, peeled and grated#2 tbsp grapeseed oil#3 tbsp nut butter (we used almond) #4 tbsp demerara sugar #50g pecans, roughly chilled How to cook 1.Heat the oven to 200C/180C fan/gas 6. Line a muffin tin with cases. Mix 100g muesli with the light brown sugar, flour and baking powder in a bowl. Combine the milk, apple, oil and 2 tbsp nut butter in a jug, then stir into the dry mixture. Divide equally between the cases. Mix the remaining muesli with the demerara sugar, remaining nut butter and the pecans, and spoon over the muffins. #2.Bake for 25-30 mins or until the muffins are risen and golden. Will keep for two to three days in an airtight container or freeze for one month. In a small saucepan, warm oil, spices, and 1/2 tsp salt just until hot. Finely chop shallot and place in a small bowl. Pour half of oil mixture over shallot and set aside. On a large rimmed baking sheet, toss cauliflower with remaining oil mixture and roast until golden brown and tender, 20 to 25 minutes. Add lentils and vinegar to shallot mixture and let sit 5 minutes. When ready to serve, toss with spinach, pecorino, pomegranate seeds, and roasted cauliflower. 2. Heirloom Tomato-and-3-Cheese Tart List of Ingredients: All-purpose flour # 3 tbsp. cornmeal 1/2 tsp. salt 5 tbsp. cold unsalted butter 2 tbsp. sour cream 2 tbsp. cold water FILLING: 2 tbsp. olive oil 1 large sweet onion 1/2 tsp. Freshly ground pepper 1/4 tsp. salt 1 tbsp. cornmeal 3/4 can shredded Parmesan cheese 3/4 c. shredded Fontina cheese 1 log herb-garlic goat cheese 4 small heirloom tomatoes 1/4 c. small fresh basil leaves How to cook In a food processor, pulse flour, cornmeal, and salt to combine. Add butter and pulse until texture of meal, with some small pieces of butter remaining. In a cup, mix sour cream with 2 tablespoons of the cold water. Drizzle over flour mixture. Pulse until dough begins to come together in small pieces. Drizzle with the remaining water by the teaspoonful, if necessary. Turn dough out onto a piece of plastic wrap, gather into a ball, and press into a disc. Wrap in plastic wrap; refrigerate 1 hour. Filling: In a large nonstick skillet, heat 1 tablespoon of the olive oil over medium-high heat. Add onion and cook 8 minutes, stirring frequently, or until softened and lightly browned. Stir in 1/4 teaspoon of the pepper and salt. Turn onion out onto a plate to cool; when cool, toss with cornmeal. #4. Heat oven to 400 degrees F. On a lightly floured surface, with a floured rolling pin, roll dough into a 14-inch circle. If dough cracks at edges, press together. Drape dough onto rolling pin and place on a large cookie sheet. Sprinkle dough with Parmesan cheese, up to 1 1/2 inches from edge. Sprinkle Fontina cheese over parmesan top with onions. Set aside 1/4 cup of the goat cheese. Sprinkle the remaining goat cheese over onions. Arrange tomato slices on top of onions, overlapping slightly in a random pattern. Brush tomatoes with the remaining 1 tablespoon olive oil and sprinkle with the remaining 1/4 teaspoon pepper. Bake 30 minutes, until crust is browned and filling is bubbly at edges. Sprinkle tomatoes with reserved goat cheese and let tart cool 10 minutes on cookie sheet. Gently slide onto a wire rack to cool. Serve warm or at room temperature. Garnish with basil leaves before serving. 3. Roasted Red Pepper Sub List of Ingredients: 1 baguette, cut into 3 sub-size portions and then sliced open lengthwise 2 tablespoons olive oil 1 (8 ounce) can roasted red peppers, drained and chopped 2 tablespoons creamy goat cheese 2 teaspoons balsamic vinegar, or to taste 1/4 cup arugula 1/4 cup torn fresh basil leaves, or to taste How to cook Slice each baguette segment lengthwise. Brush the cut sides with olive oil. Toast in toaster to your preferred darkness, 2 to 4 minutes. Heat red peppers in a saucepan over medium heat until hot, 2 to 3 minutes. Spread thick layers of goat cheese onto the cut sides of each baguette piece. Spread red peppers onto 3 of the baguette pieces. Sprinkle balsamic vinegar over the red peppers; top with arugula and basil.
